Simple Hummus
Hummus or Houmous, as it's sometimes written, is a very tasty dip or spread that's eaten in Mediterranean and Middle Eastern cuisines. I first came across this food several years ago while I was working in an area that had a large Middle Eastern population. The ingredients are simple and the cooking procedure even more so. It remains as one of my go to foods for snacking and it is an excellent high-protein-meat alternative.
Ingredients:
-200g cooked chickpeas
-3 to 6 tablespoons of tahini
-paprika powder
-2 to 4 lemons
-garlic
-extra virgin olive oil
-Liquid from soaking chickpeas
-Salt to taste
Cooking:
As mentioned earlier, making hummus doesn't require much of actual cooking unless you bought dried chickpeas. The consistency of the end result can be adjusted to your liking and all one has to do is adjust the liquids accordingly. If you prefer a thicker spread then use less amounts of the liquid ingredients. If you like a more smoother consistency for easier dipping and spreading, then add more liquids.
Place it into a container or bowl of your choice. For finishing touches and garnishing you can add some whole chickpeas, paprika powder, and a few drizzles of extra virgin olive oil. Hummus can be enjoyed as a dip for celery and carrot sticks or on top of some flat or toasted bread. Enjoy!
